This week's Healthy Green Kitchen Challenge that I'm doing is
juicing. I have one of those big Champion juicers that I haven't used for a long time, so I dragged that out and juiced kale, spinach, granny smith apples, carrot, parsley and fresh basil. It tasted nice and herbal. My dd is lending me her Vitamix to try. I use the bullet for my smoothies and it's ok but I'd like something bigger where I can get more greens in. The juicer doesn't give you the fiber but you can get a good shot of vitamins and minerals without being too filling, so I think they are both valuable. I need to get more fiber right now, so I won't be doing too much juicing, but some. I read an interesting book called "Diabetes Without Drugs" by Suzy Cohen, RPH. She recommends lots of green drinks so I'm on the right track I just need to do more.
My coconut yogurt failed, but I'm still using it in my smoothies. I think I need to get a culture ( I didn't use the link I gave you, but I'm thinking I need to). I don't think the coconut yogurt from the store dissolved, also the yogurt maker fails most of the time so I need to go back to the methods I've used that work or get a yogurt maker.
