Chicken Stir Fry



Here is link to Comfy Belly's stir fry recipe Chili Chicken Stir Fry. I changed a few things. I used green beans, red onion and mushrooms instead of her veggies. I used coconut sugar instead of honey. I left out cayenne. It was very good but next time I'm going to use more spice. I could taste it on the chicken but not so much on the veggies. It was not spicy at all so I may add a little cayenne next time.

I was watching The Next Food Network Star and one of the contestants was talking about how he lost weight by embracing flavor. I thought that was a good idea and so I liked this recipe because of the spices in it. I noticed he used a lot of spice mixes in his food. He also used wine and herbs.

I'm trying to lose the weight I gained recently before I see my doctor again.

Paleo Chicken Piccata

I've made Chicken Piccata before but I wanted to try this recipe because it uses almond flour and an egg wash. I liked that it is finished in the oven because you are less likely to burn it that way. It was really good. I served it with steamed green beans. The only changes I made in this recipe was to substitute chicken broth for the white wine and I added a little dash of the caper juice.

Greek Chicken


Here is the link. The photo is the chicken ready to put into the oven. As you can see I used several different kinds of pieces and I used cloves of garlic instead of a whole garlic and my onion is in smaller pieces. I didn't make the Tzatziki sauce, also I'm sure it would be wonderful, I just made a similar sauce with the lamb last week and I can't eat pita bread although I have a recipe for a grain-free one that I want to try some time. I'm cutting down a little on the baking for now. The other thing I did different is I added some of the baby zucchini when the chicken was almost done and roasted those too.



I love roasted red onion and garlic. I never have tried roasted olives and they were delicious too. I have another recipe I want to try that uses green olives and prunes. I started this in a 350 oven because something else was in the oven and then turned it up to 375. I also cooked it a lot longer than the recipe calls for because I like my chicken well done and crispy.
