My GI doctor told me to start taking Benefiber. As you know I'm on a gluten-free diet. The first ingredient in Benefiber is wheat! I researched fiber and found out what I need is soluble fiber and cranberries were listed as a source. Last fall I froze several bag of them and I was thinking I should do something with them.
This article at About.com talks about the benefits of cranberries and has several low carb recipes. There is a recipe for
sugar free dried cranberries that I made the
Cranberry Vinaigrette. It was pretty good.
